Samlor Korko (Mixing Soup)

Introduction
Samlor Korko, also known as "Mixing Soup," is one of Cambodia’s oldest and most beloved dishes. It combines
a medley of vegetables, green fruits, and sometimes meat or fish in a savory broth flavored with kroeung
(Cambodian spice paste) and roasted rice powder. This nutritious soup is a staple in Cambodian households
and is enjoyed for its rich, earthy flavors.

Ingredients
- Chicken or pork (500g, cut into bite-sized pieces)
- Kroeung paste (3-4 tbsp)
- Roasted rice powder (3 tbsp)
- Green papaya, peeled and sliced (1 cup)
- Eggplant, diced (1 cup)
- Green beans, trimmed and cut (1 cup)
- Pumpkin or squash, peeled and cubed (1 cup)
- Fish sauce (2 tbsp)
- Sugar (1 tsp)
- Fresh herbs (cilantro, basil) for garnish

Step 1: Prepare the Base
Heat a large pot over medium heat. Add the kroeung paste and sauté until fragrant. Stir in the chicken or
pork pieces and cook until lightly browned.

Step 2: Add the Vegetables
Add the green papaya, eggplant, green beans, and pumpkin to the pot. Stir well to coat the vegetables with
the kroeung paste.

Add enough water to cover the ingredients and bring to a boil. Reduce the heat to a simmer and cook for
